So far this year it would seem that I may be on track to be organised. And while I appreciate just saying that out loud may scupper things, I’ll get cracking anyway…
One thing I want to give this year is small loaf cakes. I love baking and the results are usually well received, so… But how to bake them and then which ones will keep?
First thing – some cases just the right size. I’ve found a brilliant source for these with Bakery Bits and promptly ordered some small loaf cases, Panettoncini cases and some square panibois (wooden baking baskets) for brownies.
Next, to choose the ideal cakes for each recipient, cakes that can stand to keep for a few days, allowing for sending them and being tasty beyond Christmas day…
So far on my list:
Nigel Slater’s Lemon Loaf Cake
Parkin
Nigella’s Clementine Cake
and my favourite and best Brownies
Which is probably more than sufficient, and simple-enough recipes for those of us with limited physical ability.
I’ll test out the recipes for each when the cases arrive and share the results with you here…
And if you have any suggestions for really simple but rather lovely baking gifts, do share. 🙂
